What to Do with Thanksgiving Leftovers?

Happy Thanksgiving! 

I stayed in Rochester for Thanksgiving break but didn't miss out on the feast. My roommate and I snatched the last roasted turkey at Wegmans and indulged in a full Thanksgiving meal until we nearly fainted. The leftover ingredients started falling off the top of the refrigerator so I had a cooking marathon on Black Friday instead of shopping. If you have a pile of leftovers that are about to go bad, try making curry! Super quick, easy, and budget-friendly. Perfect for college students.

Thanksgiving Leftover Curry

Ingredients:
2 cups of leftover vegetables (sweet potatoes, string beans, onions, etc.)
1 cup of leftover turkey
2 cubes of Golden Curry
2-3 cups of water
A little oil or butter for sautéing the vegetables.

*This recipe serves 2 people.

1. In a medium-size pan, sauté the vegetables for a couple minutes, then add water until the vegetables are almost immersed.

2. After the vegetables and water start to boil, reduce heat and add two cubes of Golden Curry and stir until they dissolve. (You can find Golden Curry at any Asian market, or at the Asian aisle at Wegmans or Walmart.)

3. Once all the curry is dissolved, turn off the heat and add pieces of leftover turkey. Stir. The meat might absorb too much liquid, so if the curry becomes too dry, add a bit of hot water and stir again.

Serve with steamed rice or soba noodles.
